Construction of the Dojima Sake Brewery within the historic grounds of Fordham Abbey, Ely, is well underway and nearing completion.
Local MP, Lucy Frazer went to see how the development of what will be the first Japanese owned sake brewery in the UK is coming along.
Lucy met up with UK brewer Tony Mitchell who is to be joined by a Japanese brewer once the brewing process begins. The two are pictured infront of a rice steamer which is a key piece of equipment used in the brewing process.
Lucy said, "It was an exciting and fascinating visit. Tony explained how the test brewing is due to begin soon and that many tests need to be done to perfect the recipe before opening. I very much look forward to returning once the venture is open to the public. There are plans for a cafe, visitor's centre and Japanese cultural centre to go alongside the brewery and I think it will be a great attraction for locals and tourists alike. "
